Elyse Clarke and Kate O鈥橲ullivan are the founders of Fable Bakery, an independent bakery in D煤n Laoghaire, County Dublin.
After completing the 12 Week Certificate Course, Elyse and Kate launched Fable Bakery in 2022. They began by selling their pastries at Dublin鈥檚 farmers鈥 markets before opening their first permanent bakery later that year. Their success led them to move into a larger bakery and caf茅 in D煤n Laoghaire, where they continue to grow the business with their team.
Fable has become known for its beautifully crafted pastries, seasonal buns, cakes and breads, all made with a focus on quality ingredients and skilled baking. Their menu evolves throughout the year, celebrating the changing seasons while combining classic techniques with contemporary flavours.
From its beginnings as a market stall, Fable has become one of Dublin鈥檚 best-loved bakeries, attracting a loyal following for its exceptional baking, welcoming atmosphere and commitment to producing delicious food every day.
